I started selling Kobe burgers at the Fishguy over five years ago and we sell so many that it finally dawned on me to offer a burger sandwich. The Wagyu Steer originally bred in Japan provides the beef for this simple burger sandwich. In the mid 80’s I was at an operation in Kobe and saw how they raised the beef. They did mix beer in with the alfalfa and attendants massaged the animals as well, but that was more to provide general circulation as they get no exercise. The goal is to produce fat and marbling and with limited grazing available in Japan this is achievable. It is worth mention in those days that along with ‘Johnnie Walker’ a gift beyond reproach for Japanese hosts was American Beefsteak. Some 4 inch thick, grain fattened strip loin from the Midwest and a bottle of ‘Johnnie” was almost more than a host could bear to receive. American Beef is still a big deal in Japan as it is almost anywhere outside the U.S. I feel that the imported Wagyu has a fat content that sets it apart and makes for a really good burger. Many critics or should I say ’bloggers’ point out that unless it is raised in Kobe it is not the real deal. Kobe is a city in the Hyogo prefecture, Wagyu is the breed of steer. It’s like arguing that a ‘ New York Strip’ from beef raised in South Dakota is falsely labeled. Due to the land available in Australia the Japanese have been breeding Wagyu there for many years and achieve excellent results. I buy from the Greg Norman ranch which is somewhat akin to saying I buy from the Lebron James ranch since I’m sure Mr. Norman does about as much ranching as Mr. James. Our Burger 5.5 oz. pre cook weight. Griddle cooked towards rare and served on a toasted burger roll thinly buttered with our own version of ‘secret sauce’ meant to provide an underlying enhancement to the juicy beef. If cheese is requested it will be imported Havarti. Tomato, onion, lettuce, mustard, ketchup etc. are not part of our burger but can be included on yours with no eyebrows raised. A heads up is recommended as we are not always able to accommodate walk in requests. It’s a tasty burger and worth calling ahead for. Price 7.50 per (10 or more are 6.50 per)
